"Pass the Salt" LINK UP WEEK 2

Welcome “Pass the Salt” Sunday Link Up! If you’d like to swap recipes, come on and join in.

The Rules, because there are always rules:

1. Share a recipe (anything goes)
2. Add our “Pass the Salt” button in your recipe post

Now let’s wipe down our stove top, dust off the caps of your spice rack, strap on your apron, and lets cook something together!




Chinese Chicken

Your Shopping List:

3 large skinless chicken breast
½ pounds of de-tailed shrimp
1 fresh broccoli head
Red Onion
Asparagus
Water Chestnuts
Bamboo Shoots
Chinese Baby Corn
Ginger Seasoning
Sesame Seeds
Unsalted Peanuts
Asian Ginger Dressing
Angel Hair Pasta
Soy Sauce

How to Prepare:

  1. Cut chicken into small square pieces and cook in a pan. Use Asian Ginger Dressing instead of olive oil.
  2. Once chicken is fully cooked, add water chestnuts, bamboo shoots, baby corn, red onion (cut), asparagus (cut), ½ cup of Asian Ginger Dressing, and a splash of soy sauce. Cook.
  3. In a separate pot, boil noodles along with the broccoli (cut into small pieces)
  4. When all is cooked, dish out your plate- add unsalted peanuts, sesame seeds, and soy sauce to taste
  5. ENJOY!

Pass the Salt LINK UP!

Now let’s wipe down our stove top, dust off the caps of your spice rack, strap on your apron, and lets cook something together!



Recipe: Breakfast Tacos


What you’ll need:
  • fajita-sized flour shells
  • 2 large baking potatoes (or a small bag of red potatoes)
  • ½ large yellow onion
  • 1 ½ reduced fat sausage log
  • 2 cups of Egg Beaters (or 6-8 eggs)
  • cumin
  • chili powder
  • red hot (optional)
  • cheese and sour cream

How:

  1. Dice onion and heat with 2 tablespoons of olive oil on medium-high.
  2. Dice and peel potatoes, add to onion. (optional, add hot sauce for taste) Cook until done.
  3. Add sausage and brown it.
  4. In a separate pan scramble eggs, add to potatoes.
  5. Add cumin and chili powder (couple tablespoons of each)
  6. Stir Well.
  7. Add toppings as desired and serve!

I'm starting a Link Up this Sunday to swap some delish dishes! It can be anything you'd like- gourmet, kid friendly, healthy, not-so-healthy, appetizers, desserts, drink mixes, ANYTHING goes!

Where I'm at... (blog hop)

As I was madly catching up on over a week's worth of blog posts (sorry guys), I came across a fun link-up on A Little Something, hosted by Marine Parents.

Just like the next girl beside me, I love interior design. I seek to create a functional space that's organized, has clean lines, and is centered around colors that flow well together. I'm constantly drawing out inspiration from Pottery Barn, Ballard Design, Coastal Living, and DIY magazines.

The Desk

I bought this desk for Ron with the money I made off of selling my first painting! (It sold for $650- you know, before the economy decided to take a dive head first into the shallow end of the pool. Good times.) We've been wanting an executive style desk for quite some time, so when I came across this one, I jumped at the opportunity to surprise my husband.

Blizzard Bloghop and a giveaway!


Today, I’m snowing myself in to the Blizzard Bloghop…

Hello, hello!

My name is Emily and this is my little blog, The Writings of an Air Force Wife.

As cliché as it sounds, this blog is my “happy place”. Every week I sit in the same chair, at the same desk, possibly drinking coffee out of the same mug, and I write. I write and I reflect on all things good and positive in my life. Years from now, it’s the good that I want to remember.

I’ve been married to Ron for (almost) nine years and together we have two beautiful children, Krysta (7 yrs) and William (11 months). We’ve endured six deployments and a handful of TDY’s to the sandbox. The Air Force has given us the amazing opportunity to live in the Great State of Alaska for the past four+ years. We’re currently in the process of PCSing this spring- destination unknown.

I’m a professional commissioned artist. I love painting almost as much as I love milk and cookies. When I’m not painting, my other loves include, in no particular order, freshly brewed coffee, Sunday mornings, photographing my babies, salt air, chunky sweaters on a crisp autumn day, good conversations with friends, laughing until my sides hurt, dirty politics, my husband’s taco recipe, and a good book under a thick quilt.

So, come and stay awhile and read about the life we’re creating!

Thankful Tuesday

Today, as I've been attempting to write a blog post, I find myself in tears and having to pull away from the computer. I've been dealing with a lot of issues, both good and bad, that have been weighing heavy on my heart since this past summer. Issues that have rocked me to my core.

Since it's Thankful Tuesday, I'm going to put that emotional blog post to the side, and focus on the positive aspects from this past week.


1) making GREAT progress on my latest commission. I sent a photo to my client for approval, and she LOVES it! Hard work pays off.

 2) going to Target with my firstborn for storage bins to organize her toys. Her toys were once in canvas baskets placed on her bookcase, but it didn't seem to work well. Hopefully the stacking storage bins being placed in her closet will be a better system.

3) weeded through William's baby clothes. Talk about waterworks. My baby squirrel is getting WAY TOO BIG!

4) 2011. a clean slate. a fresh start.

5) my husband, who has been cooking the majority of our dinners this week so I can continue to work on my commission.

6) iced snow. It has been so cold that the snow has turned to flaked ice which has made everything frosty and sparkly. Beautiful.

 7) my babies. William, who is learning to walk! Krysta, who is getting ANOTHER academic award this Thursday.

8) inspiration and motivation. I'm ready to be a better in all aspects of life.

9) patience. we're moving from Alaska in 18 weeks and we still have NO CLUE where we're going!

Things you should know about me, if we're going to be BFF's

I've seen this link up on three blogs that I follow within the past couple of days, so if it's not too too late, I'm joining in...

I'm Emily, 28 (GAH!), born and raised in the Outer Banks of North Carolina.

I'm a beach girl who is temporary living in Alaska.

I'm an Air Force wife. We've survived 6 deployments and a handful of TDY's.

I've been married to an amazing man for over 8 years and have two pretty awesome babies.

My daughter- Krysta Jean, is 7 years old. My son- William Emerson, is 10 months old.

I'm obsessed with writing. I used to scrapebook; my blog now replaces that.

I'm a professional artist, specializing in portraiture. Art runs through my veins.

I'm obsessed with photography. My kids are my biggest inspiration.

I'm a do-er and a daydreamer.

Crisp autumn days are my favorite.

I adore the sparkle of Christmas.

I'm a planner- birthdays, weddings, events, you name it.

I can't function under pressure and I don't deal well with stress.

I have a very mellow personality, but I need order in my household.

I'm a conservative and I love SGP (Smart Girl Politics).

I've been breastfeeding for 10 months and counting.

I have a weird obsession with mermaids, swordfish, angels, lemons, fish, Mexican food, and the color red.

I want to tour Europe (mainly Ireland) before I die.

I think it, so I do it. I believe I can, so I do.

I believe we create our own happiness.
